I was jealous of all these sweet potato hummus recipes popping up everywhere! So after an extended stint of wallowing in my sorrows, I decided to try it raw. It turned out quite lovely! And vibrant too! Food with color excites me right down to the four corners of my feet. Love!
Spicy Sweet Potato Hummus:
1 sweet potato peeled and chopped (I let these soak over night in a bowl of water. I don’t know if it made much of a difference but I suggest it if you have the time.)
4 Tbs cold pressed olive oil
1/2 cup raw tahini
1 1/2 tsp paprika
2 Tbs lemon juice
1 tsp cumin
1/4 tsp cayenne
1 tsp garlic powder
about four grinds salt and pepper
Drain and rinse sweet potatoes (they will not be soft if you’ve soaked them, don’t fret if they aren’t). Add all ingredients into a food processor and blend until smooth. This may take a while. Start and stop the processor frequently to mix everything with a spoon and make sure it is all being blended together properly.
The end result should be relatively smooth. Expect it to have a bit of roughage to it since you’re using raw sweet potatoes. Slice up zucchini, cucumbers or bell peppers and enjoy!
